Pickled Cucumber

Ingredients
1 cucumber
150ml spirit vinegar (or white wine vinegar)
100ml water
2 tbsp sugar (adjust to taste)
1 tsp salt
Toppings
A few whole cloves (optional)
A few allspice berries (optional)
A few slices of Madame Jeanette chilli, for heat (optional)
Steps
Wash the cucumber well (leave the skin on for colour)
Halve lengthways and scrape out the seeds with a spoon (keeps it crunchy longer)
Thinly slice into half-moons or rounds
In a bowl or jar, combine vinegar, water, sugar, and salt
Stir until the sugar and salt have fully dissolved
Add the cloves, allspice, or chilli if using
Add the cucumber slices, making sure they're fully submerged
Chill in the fridge for at least 30 minutes (overnight is even better)
