Pickled Cucumber

Ingredients
  • 1 cucumber

  • 150ml spirit vinegar (or white wine vinegar)

  • 100ml water

  • 2 tbsp sugar (adjust to taste)

  • 1 tsp salt

Toppings
  • A few whole cloves (optional)

  • A few allspice berries (optional)

  • A few slices of Madame Jeanette chilli, for heat (optional)

Steps
  • Wash the cucumber well (leave the skin on for colour)

  • Halve lengthways and scrape out the seeds with a spoon (keeps it crunchy longer)

  • Thinly slice into half-moons or rounds

  • In a bowl or jar, combine vinegar, water, sugar, and salt

  • Stir until the sugar and salt have fully dissolved

  • Add the cloves, allspice, or chilli if using

  • Add the cucumber slices, making sure they're fully submerged

  • Chill in the fridge for at least 30 minutes (overnight is even better)
