Aubergine Croquette

Ingredients
  • 1 eggplant, sliced

  • Salt, pepper + spices of choice

  • Flour

  • 1–2 eggs, beaten

  • Panko breadcrumbs

  • Oil for frying Ghee or coconot oil

Steps
  1. Slice eggplant into sticks or rounds

  2. Season with salt, pepper and spices

  3. Coat: flour → egg → panko

  4. Fry in hot oil until golden and crispy

  5. Drain on paper towel, serve hot
