Aubergine Croquette

Ingredients
1 eggplant, sliced
Salt, pepper + spices of choice
Flour
1–2 eggs, beaten
Panko breadcrumbs
Oil for frying Ghee or coconot oil
Steps
Slice eggplant into sticks or rounds
Season with salt, pepper and spices
Coat: flour → egg → panko
Fry in hot oil until golden and crispy
Drain on paper towel, serve hot
