Ingredients
1–2 fresh jalapeños, finely chopped
1 cup shredded cheese (cheddar or mozzarella)
Spring roll wrappers (loempia wrappers)
1 egg, beaten (for sealing)
Cooking oil (for deep frying)
Instructions
Prepare the filling
In a bowl, mix the shredded cheese and chopped jalapeños.
(Remove the seeds if you want it less spicy.)Wrap the loempia
Place 1–2 tablespoons of filling on one side of a wrapper.
Roll tightly, fold in the sides, and seal the edge with beaten egg.Heat the oil
Heat oil to 170–180°C (340–350°F).Fry until golden
Fry for 3–4 minutes or until golden brown and crispy.
Do not overcrowd the pan.Drain & serve
Let them rest on paper towels for a minute.
Serve warm — best enjoyed while the cheese is still melty.
